Equipment

  • Boston shaker or cocktail shaker
  • hand juicer or juicing machine

Ingredients

  • 3 oz fresh grapefruit juice
  • 2 oz tequila blanco or reposado
  • 1/2 oz agave syrup
  • ice for shaking and serving
  • 4-6 oz ginger beer
  • fresh rosemary, mint, or thyme optional

Instructions

  • Prepare the fresh grapefruit juice using a hand juicer or juicing machine. Measure 3 fl oz and add to a cocktail shaker. At this time, you can also cut a slice or wedge of grapefruit for garnish (optional).
  • Add the tequila and agave syrup to the shaker. Add a pinch of salt (optional) if not salting the rim of your serving glass.
  • Add ice to your serving glass before filling the cocktail shaker with ice. Seal and shake vigorously for 10-15 seconds until chilled and well-mixed. Pour through a strainer, over ice, in your serving glass.
  • Top with ginger beer and garnish with a slice or wedge of grapefruit and sprig of fresh herbs (if using). Serve immediately and enjoy responsibly.

Notes

If using a juicing machine, add a knob of fresh ginger to intensify the ginger flavor. Alternatively, swap the ginger beer for ginger ale for a more subtle and sweet ginger flavor. 
Store leftover grapefruit juice in the refrigerator, sealed tightly. Use within 3-4 days for best results.
