Cinnamon French Toast Casserole

This easy-to-prep French Toast Casserole is perfect for holiday breakfasts, weekend brunch, or anytime you need to serve a crowd for a morning meal.

Ingredients

For the French Toast

  • 1 loaf Brioche bread
  • 8 ounces cream cheese softened
  • 2 tbsp sugar
  • 3 tsp vanilla extract
  • 8 eggs
  • cup whole milk
  • ½ tsp cinnamon
  • cup packed brown sugar

For the Streusel Topping

  • 1/2 cup packed brown sugar
  • 1/2 cup flour
  • 6 tbsp butter
  • 1/2 tsp cinnamon
  • powdered sugar optional
  • maple syrup optional

Instructions

For the French Toast

  • Preheat oven to 350 degrees F. Lightly grease a 9"x13" casserole dish. Slice the bread into thick slices, then into 1" cubes. Place in a large mixing bowl. 
  • Beat or mix together cream cheese and sugar. Use a soft spatula to scrape the sides of the bowl, then add the vanilla, eggs, milk, cinnamon, and brown sugar. Beat or mix together until smooth. Set aside while you prepare the streusel topping. 

For the Streusel Topping

  • Using a hand mixer or fork, combine the brown sugar, flour, butter and cinnamon until the texture is crumbly.

For the Casserole

  • Pour the cream cheese mixture over the prepared bread. Combine using the soft spatula, then transfer to the prepared casserole dish. Spread the streusel topping in an even layer. 
  • Bake uncovered for 45–55 minutes or until golden brown. Remove from oven and allow to cool slightly. Serve immediately with powdered sugar (if using) and maple syrup.
